The Truth about Vitamins

Vitamins are essential nutrient groups that take part in most of our body’s processes and except for Vitamin D our body cannot make any of them. So we need to get them from the various sources of food in our diet and no single food source can supply all the vitamins we need, which is why we need to consciously consume an array of foods and have enough servings of fruits and vegetables a day instead of picking and choosing a few healthy foods. It is also essential to get updated on some of the recently discovered and not frequently talked about vitamins to make sure we are covering all grounds when it comes to good health. Here is a vitamin 101 for you….

Among the recently discovered vitamins, B13 considered more of a substance than a vitamin itself, helps metabolize other vitamins and folic acid and treats liver problems and multiple sclerosis; found in root vegetables like carrot and beet. Vitamin K, which is virtually unattainable as a supplement is useful for reducing heavy menstrual flow in women and can be incorporated in your diet through yogurt and alfalfa sprouts. For our beauty needs, Vitamin H also known as biotin aids in flawless skin and healthy hair and is found in abundance in dairy products, liver, beef and kidney. Another lesser known one, vitamin F helps found it nuts and seeds, reduce bad cholesterol and burns fat in our body by breaking down saturated fats.

Moving on the better known vitamins, A is an important anti-oxidant that fights free radicals in the body and aids in the building and strengthening of bones and skin, reducing the chances of chronic illnesses and the ageing process. To amp up on Vitamin A load up on beta-carotene found in apricots, carrots, cantaloupe, and pumpkin, and lycopene-rich tomatoes, watermelon, and guava.

Vitamin C is a treasure house of disease-fighting properties, aids in wound healing and plays a role in the formation of red blood cells. Vitamin C also boosts levels of brain alertness and increases concentration. The levels of vitamin C decline in our body with age so its essential to substitute it with our diet once you are 30+. Food sources of vitamin C include broccoli, grapefruit and grapefruit juice, kiwi, oranges, pepper, potato, strawberries, and tomato.

Vitamin E plays a key role in the formation of blood cells, maintenance of our body cells, fights skin-cancer and slows down ageing but be wary with this one because taking too much vitamin E daily increases the risk of bleeding. Food sources of vitamin E include margarine, corn oil, cod-liver oil, hazelnuts, peanut butter, safflower oil, sunflower seeds, and wheat germ.

Vitamin B group is especially important for women’s health, especially B6 and B12 and folic acid. These B vitamins are essential for brain function and building DNA and are especially important during childbearing years and pregnancy to prevent birth defects, and fight different types of cancer. Vegetarians and women over 50 specially need to watch out for B12 related deficiencies that can cause anemia. For B6 include avocado, banana, beans, cereal, meats, oatmeal, poultry, seeds; B12 dairy products and eggs; and get folic acid from spinach, greens, beans and citrus fruits.

Vitamin D helps to activate calcium and phosphorous, in the absence of which our bones get depleted leading to conditions like osteoporosis, which mainly afflict post-menopausal women. Turn to fish and sunshine for your regular fix of this vitamin.

Vitamin K, although not considered essential plays a critical role in promoting strong bones and maintaining normal blood clotting in older people. The best food sources include green leafy vegetables, soybean oil, broccoli, alfalfa, cooked spinach, and fish oil.

While you can have vitamin substitutes, they are best absorbed in the body in their natural form. The deficiency of these essential vitamins can be compensated by medicinal supplements but consult your doctor because there are severe consequences to consuming mega-doses of these vitamins.

Natural Allergy Fixes: Food & Herbs that Fix Your Summer & Spring Allergies

If you suffer from these common seasonal conditions instead of refraining from your favorite foods or spending time indoors, try these natural allergy-fighting foods and herbs that can relieve your symptoms and let you enjoy the season to its fullest:

Broccoli: This wonder food can fight your allergies in two-ways: clearing up blocked sinuses and soothe your allergy with a high concentration of Vitamin C. A cup of raw broccoli packs about 80mg of Vitamin C and research indicates that about 500 mg is adequate for reliving allergy symptoms.

Citrus fruits: Loaded with Vitamin C, fruits like oranges, grapefruits, lemons are your go-to fruits for warding off allergies all season long. A large orange has about 100 mg and a grapefruit about 120 mg of Vitamin C, stepping you closer to the 500mg count. Studies have also shown that high levels of vitamin C help reduce histamine, chemical involved in allergic reactions, release in the body and make histamine break down faster.

Onions and garlic: added frequently to foods in a range of cuisines including Asian and Italian dishes, these flavor enhancers are packed with quercetin that fights allergies with anti-histamine and anti-inflammatory properties. Also try apples, cranberries, red grapes and tea for quercetin related benefits.

Herbs: Garnish with parsley to inhibit the secretion of allergy inducing histamine. Other useful culinary herbs include rosemary, oregano, lemon balm, sage, marjoram, peppermint, and thyme that have large concentrations of rosmarinic acid that suppress allergic reactions.

Kale: This leafy superfood also delivers double protection from allergies: clearing up blockages and introducing plenty of cartenoid, which are anti-oxidant rich plant pigments known to battle allergens, thus, boosting your ability to battle the nasty allergies.

Collard green: Another dark leafy green that works wonders for fighting off hay fever with phytochemicals like cartenoids. To increase its absorption in your body, eat the veggie with some fat source like lightly sautéed it in olive oil.

Mushrooms: Rich in selenium, a trace mineral that can produce special proteins with antioxidant properties, they can help prevent and treat allergies. Similar selenium-rich foods include cod, shrimp, halibut and brazil nuts. To get the most out of selenium’s antioxidant benefits, eat selenium rich foods together with foods that contain vitamin E.
For a treat rich in allergy fighting properties, try this mushroom and green pea risotto that is packed with the healing properties of wonder foods such as garlic, onion, mushroom and parsley:

Mushroom and Green Pea Risotto

Ingredients:
2 Tbsp olive oil
2/4 lb crimini mushrooms, cleaned, stemmed, diced
1 garlic clove, minced
1 yellow onion, finely chopped
1 2/3 cups long grain brown rice, uncooked
4 1/4 cups vegetable broth (allergen-free)
3 tbsp parsley, chopped
1/4 lb frozen peas, thawed
Salt and pepper
Fresh parsley, for garnish (optional)

Directions:
Heat 1 tablespoon olive oil in a large saucepan. Add mushrooms and season with salt and pepper. Cook, constantly stirring, for a few minutes until mushrooms soften. Transfer to a plate and set aside

Using same saucepan, heat another 1 tablespoon olive oil, and add minced garlic and onion. Sauté for a few minutes until onions begin to turn translucent. Add rice and cook for a few minutes, constantly stirring.

Add half a cup of broth. Cook, stirring occasionally, until almost all broth is absorbed. Add another half a cup of broth each time liquid is absorbed until all broth is used and rice is almost cooked (use water if you run out of broth towards end.

Add peas, chopped parsley, and sautéed mushrooms. Cook for a few minutes, constantly stirring. Season with salt and pepper to taste. Transfer to serving plates and garnish with fresh parsley.

Red White & Blue Salad
Adapted from Whole Foods
Serves 8 people

Ingredients:
1 cup (about 4 1/2 ounces) raw, unsalted cashew pieces
2 pitted dates (about 1 1/2 ounces), roughly chopped
1 teaspoon vanilla extract
1 pound strawberries, hulled and halved
11 ounces blueberries
1/4 cup roughly chopped mint

Directions:
Put cashews into a large bowl, cover with water and set aside at room temperature to let soak for 4 hours or overnight; drain well. Transfer to a food processor; add dates, vanilla and 1/2 cup plus 2 tablespoons warm water and purée until smooth. In a large serving bowl, toss together strawberries, blueberries and mint. Serve with cashew cream.

Per serving: 160 calories (70 from fat), 8g total fat, 1.5g saturated fat, 0mg cholesterol, 0mg sodium, 20g total carbohydrate (3g dietary fiber, 11g sugar), 4g protein

Lichi For Life: The Sweet Spot- How Natural Is Natural?

sugar, natural, diet, health, weight loss, obesity, sweeteners, artificialSo, you have a little bit of a sweet tooth.  You aren’t the only one.  Americans consume about 135 pounds of sugar each year on average.  There is no coincidence between this and the fact that in 2010 the Centers for Disease Control & Prevention reported that 68% of adults in the U.S. were overweight, and 37% were obese.  The question is how can you avoid becoming a percentage of those statistics?  A good starting point is by monitoring your sugar intake.  If you have to satiate that sweet tooth of yours, replacing sugar with natural and more health beneficial sweeteners is a good start however, merely replacing artificial sweeteners and refined or processed sugars is not enough.  Even when you substitute your sweetener with a more nutritional alternative, it comes down to this; sugar is sugar, and limiting your intake in any form, natural or not, is imperative to staying slim and in good health.  Here are the facts on some of those sweet spots…

Refined table sugar, though it appears to be a simple and unprocessed additive, is conventionally grown, chemically processed, and striped of all beneficial properties by the time it gets into your food or sugar bowl.  Many health advocates believe that refined sugar is one of the leading causes of health problems in the U.S. due to its acidic effect on the body, causing calcium and other mineral depletion from bones and organs.  Over consumption of sugar is the leading cause of obesity in the U.S.

Artificial sweeteners such as Splenda, Equal, or Sweet & Low are comprised of cancer causing chemicals that are toxic.  Ironically using these sweeteners can indirectly lead to weight gain, which is usually why you are using the sugar substitute to begin with!

High Fructose Corn Syrup is believed to be one of the major contributors or health problems in our society.  It is used as a sweetener in many processed food products on the market because of its cost effectiveness in comparison to sugar.  It is thought to be a leading cause to illnesses such as heart disease, diabetes, liver failure and certain cancers, among others.  Check the nutritional information on your foods and try to avoid using foods that list high fructose corn syrup as an ingredient.

Stevia is a sweetener derived from the extract of the South American Stevia plant leaves.  Although it is tremendously sweeter than table sugar, Stevia is not a sugar. Unlike other popular sweeteners, there are no known side effects and the product has been approved by the FDA.  This should not be confused with other mass market variations of the product such as Truvia, which have not yet been deemed as 100% safe due to the side effects.

Raw Honey is a healthy sugar alternative in moderation with antioxidants, minerals, vitamins, amino acids, enzymes, carbohydrates, and phytonutrients, raw, unprocessed honey is considered a superfood and remedy for many ailments including allergies and cold symptoms.

Agave Nectar is sweet syrup made from the Blue Agave plant, Agave Nectar is obtained by the extraction and purification of “sap” from the agave plant, which is broken down by natural enzymes into the monosaccharides (simple sugars): mainly fructose (70-75%) and dextrose (20-26%).  It is thought to have antibacterial and digestive benefits by practitioners of natural medicine.

Maple syrup is made by boiling sap collected from natural growth maple trees during March & April. It is refined sap and is therefore processed.  It is much more nutritious then refined table sugar and high fructose corn syrup, there are better choices.

Lichi Love: Rock Your Body

body type, lychee, super fruit, body imageA healthy body comes in all different shapes and sizes.  Whether you are an hourglass or a pear shape, knowing your body type can make a world of difference when tackling your weight loss goals.  While you are on your path to better health, whether its to lose weight or build muscle, there are some simple things you can do to look and feel great on your way to your goal.  Eating, exercising, and even dressing specifically for your body are all things you should take into consideration in order to look and feel your best.  If you naturally have a “Pear Shaped” body, whether you are trying to lose weight or not, you will not have the same nutritional & fitness needs as someone with an “Hour Glass” body, and you certainly would not wear the same types of clothing.  If you look good, you will feel good, and feeling good is the most important step in achieving and maintaining your ultimate goals.  Statistically, individuals that feel better about how they look at any size, and have knowledge of their body type, are more likely to both reach their ideal body goals, and stay there!  Use the information below to help determine which body type you are, and what positive behaviors best suit your needs!

Hourglass

  • Full hip-line and your full bust-line are the same width
  • Well defined or narrow waistline
  • Balanced body vertical body shape
  • Fat distributes evenly

Diet:

Fruits, vegetables, grains, beans and dairy 2-3 servings a day, about 3 servings weekly of fish, nuts and seeds, limit intake of meat and eggs to 2 servings per week, avoid oily foods

Exercise:

Cardio should be balanced with training. Any cardio technique is fine, so keep a variety! This is the ultimate body frame for fitness. A balanced upper/lower body training program with a variety of exercises works well.  A well balanced routine for the abdominal muscles should include lower abs, upper abs and obliques.

Clothing:

Just about every cut and style works for this body shape.  Just wear clothes that fit you, avoid wearing anything too tight that would add the appearance of bulk.  If you have problem areas, see what other body types do to conceal them, and dress accordingly.


Inverted Triangle

  • Proportionally large bust, or you have broad shoulders, or both
  • Narrow hips with a well defined waist
  • Usually long, slim legs with vertical body shape

Diet:

Small meals 5-6 times a day should include 2-3 servings of grains, nuts & seeds, minimally processed dairy products, oils, and 1-2 servings of vegetables, meats and/or eggs.

Exercise:

The stepper is a good form of cardio to burn calories and add thickness to those skinny legs, as well as the treadmill on an incline. Avoid the elliptical machine. For weight training, exercises including Squats, Leg Presses and shaping exercises such as Extensions and Lunges are ideal. Use moderate to heavy weight and keep the repetitions on the lower end.  Upper body resistance training should consist of low weight and high reps in all muscle groups for toning.  Upper abdominal exercises such as simple curls are great for tightening up the stomach.

Clothing:

Pick pieces that are shaped but not tight. Bring attention to the bottom half of the body.  Avoid high necklines and high waistlines.

Pear Shape Body

  • Full bust-line is proportionally narrower than your full hip-line and you have a well defined waist
  • More narrow shoulders, bottom heavy
  • Balanced body or short legged vertical body shape
  • Thighs are typically full

Diet:

Restrict intake of grains to no more than 2 servings per day, protein-rich vegetables and beans (2-3 servings per day), limit dairy and red meat to 2 servings per week, avoid sweeteners & use of condiments.

Exercise:

Lower body cardio can be effective to rid the excess weight in the lower body, such as walking, cycling, or elliptical machine. Light to moderate resistance training, using Shoulder Presses, Lateral Raises, and Pulldowns will help build upper body muscle for balance. Avoid Squats, Leg Extensions and Lunges.  Focus abdominal exercises on the lower abs with low lifts and hyper extensions.

Clothing:

Bring attention to/emphasize the top half of the body and away from problem areas.  Avoid clingy skirts and tapered pants. Wear lighter colors on top and darker colors on the bottom.


Rectangle Shape

  • Full bust-line (with a small-medium bust), and full hip-line are about the same width
  • Little waist definition
  • Legs and arms will typically be proportionally slender
  • Balanced body or long legged vertical body shape

Diet:

Small meals 5-6 times a day and include 2-3 servings of grains, nuts & seeds, minimally processed dairy products, oils, and 1-2 servings of vegetables, meats and/or eggs in their diet.

Exercise:

Cardio should be kept to a minimum, preferably the stepper, and more focus should go on the resistance training.  This should be intense and brief.  Each muscle group should be trained once weekly. You want to put emphasis on building muscle, therefore keep the repetitions in the low to mid range.  Abdominal exercises should be equally balanced in upper & lower abdominals, and heavy in the obliques.

Clothing:

Wear draped fabrics with patterns to create curves.  Wearing halter tops and accessories will help this as well.  Also wear fitted pants, or skirts with pleats or gathering to add shape to your bottom.

Apple Shape

  • Appearance of being round- undefined waistline
  • Broader shoulders
  • Waistline is undefined, typically has “love handles”
  • Hips are wide and thighs are full- legs are slim in comparison

Diet:

Restrict intake of grains to no more than 2 servings per day, protein-rich vegetables and beans (2-3 servings per day), limit dairy and red meat to 2 servings per week, avoid sweeteners & use of condiments

Exercise:

Routine cardio, such as the treadmill on an incline or the stepper, are necessary to generate overall weight loss. The elliptical machine should be avoided as it leans out the legs too much. Weight training should be focused on the legs to create balance with the upper body. Include more Squats and Leg Presses to bring the lower body up to speed with the upper body.  Abdominal exercises should include heavy oblique work & lower abdominal lifts.

Clothing:

The secret is not to hide any part of the body, but to show it off, nobody looks good in a straight oversized tent dress. The clothes must be fitted (not tight) and curve hugging.


Diamond

  • Waist is undefined
  • Larger, high-set stomach
  • May have “love handles”

Diet:

Fruits, vegetables, grains, beans and dairy 2-3 servings a day.  About 3 servings weekly of fish, nuts and seeds.  Limit intake of meat and eggs to 2 servings per week, and avoid oily foods.

Exercise:

Heavy cardio is important for this body type, so choices should be focused on trimming the upper body using the treadmill or the stepper.  Concentrate on lower body for weight training with Squats, Leg Presses, Extensions and Lunges.  Focus on abdominal exercises that narrow the waist by working the obliques.  Avoid over working the upper abdominal muscles.

Clothing:

The same rule applies here as it does to the apple shape.  The clothes must be fitted (not tight) and curve hugging. Bring attention to/emphasize the top half of the body and away from problem areas.

Lichi Lore: A Lychee Flashback of 4,000 Years

The Lychee Berry has a long history of cultivation and usage, that dates back as early as 2000 BC.  This delicious and nutritious super fruit has stood the test of time as a fruit revered for its delicious flavor, luscious texture, and superior health benefits.  This timeline outlines the lychee’s journey through time, from the ancient trees in China, right to your Lichi Super Fruit Soft Gels.  Pretty impressive for such a little berry!

2000 BC

Lychee crop cultivation becomes prominent in southern China and Malaysia.  Fresh lychees were in such high demand that the Imperial Court of the Sung Dynasty would have special courier services with fast horses expedite the fresh fruit to the palace from Canton.

1500 BC

Horticultural writings of Chinese farmers mention dozens of lychee varieties thriving, despite its extreme environmental sensitivity, attesting to its popularity and precise cultivation.  293 lychee trees were measured as growing up to 100 feet tall.

111 BC

The Han Dynasty royal records describe the planting of lychee trees in the palace by the order of Emperor Hanwu.  The trial of this order ended in failure when the trees could not survive the northern climate, thus resulting in using express horsemen to deliver the fruit to the palace, much like his predecessors.

730 AD

T’ang Dynasty Emperor Hsuan Tsung organizes weekly delivery of the fruit over 600 miles from southern China to his palace in the North, for Lady Yang Kuei Fei, his concubine, to woo her.

1056 AD

Chinese Fruit Culture book is written about lychee, fabling it to be the world’s romantic fruit, as a sign of love, affection and sensuality.  The book states that to win a lady’s heart, a man should give her a fruit basket filled with lychees.

1608

Chinese writer, Sung Chio of the Ming Dynasty writes his treatise on the lychee, organizing a lychee club, and citing all of the favorable and unfavorable circumstances under which he, his family, and his friends consumed the delicious fruit.  The treatise was printed in the Imperial Encyclopedia, and later in Chih Wu’s great work on Chinese Botany.

Spring Cleaning: Preparing for Your Total Body Detox!

Plan Your Meals.

Try to incorporate whole foods into your daily menu.  Substitute your simple carbohydrates with whole grains such as brown rice or quinoa.  You can make a pot of these versatile grains and use them throughout the day.  Brown rice or Quinoa with blueberries, banana and a dash of almond milk is a great substitute for cereal in the morning and is high in both fiber and protein which will help jump start your metabolism and keep you energized throughout the day.  In the evening, these whole grains make a great side with a little olive oil and sea salt, or any other spices and seasonings you make like to compliment your meal.  Buy fresh instead of frozen vegetables, and steam them until they are tender, but still “al dente”, or a little crunchy in the middle.  This ensures that they retain the highest vitamin and mineral content possible, next to being raw.  Try to substitute red meat for salmon, which is high in protein and omega 3’s, and poultry for a while flaky fish like sole or tilapia.  If you can’t cut down on the meat and poultry just yet, try to buy hand fed or free range brands.  Many of the leading brands these days are treat their livestock with antibiotics and hormones, which just add to the toxins in our bodies when digested.   When you sit down to a meal, take in all the smells, the color and the texture.  Be mindful of each bite, chew slowly and try to experience the meal with all of your senses.  This will help you eat less and digest your food better.

Take a Breath!

Now that you have hit the ground running on your cleanse, now you can do it (literally) with your exercise routine.  Get outside and get some fresh air.  Take a walk, go for a jog, do some gardening, go for a bike ride, participate or organize a cleanup of your local park.  Spring is in the air, and if you take advantage of it you will feel rejuvenated and energized.  If it’s still too chilly to take to the outdoors, take a yoga class.  Yoga postures are designed to tone and detoxify the body through a series of stretches, twists and breathing exercises.  Proper breathing is important when doing any type of physical activity.  Whether you are doing cardio, lifting weights, swimming, or anything else that exerts energy and force in motion, you should be careful not to hold your breath, and to breath evenly and deeply.  A good rule of thumb is to focus on your breath while working out, and inhale on the exertion of energy, exhale on the release.  This brings oxygen to the muscles when they can use it and need it the most.  If you are holding a pose or weight for a lengthy amount of time, breath through it.  Proper breathing also helps your endurance as you work out.

Lychee Berry: The New Super Fruit

Walking through my local farmers market last summer, I came upon the illusive lychee berry fruit. Humble and unassuming, it caught my eye despite the bright blueberries and luscious strawberries piled around it. You see, I grew up with these fruits. Raised in a Chinese home, this sweet and tangy fruit was a common snack. My mom would tell me about how her mother used to serve lychee berries for breakfast and how it was arranged next to the mangoes, papayas, and bananas.

Not only is it sweet, the lychee berry fruit is quite nutritious. After searching for it on NutritionData.com, I realized how amazing the fruit really is.

o   Low in saturated fats

o   Very low in cholesterol

o   Low in calories (depending on serving size)

o   Good source of Copper

o   Very good source of Vitamin C

I spoke to a local doctor and he provided a plethora of information regarding lychee berries. Lychee also increases the metabolism, which translates into burning more calories. An increased metabolism ultimately leads to the weight loss. Healthy Dinner Recipe Idea

Chris’s Agave-Lime Salmon w/ Mango Jicama Salsa

Mango Salsa-

  • 1-1/2 cups chopped peeled mango
  • 1/2 cup chopped peeled jicama
  • 1 cup chopped tomato
  • 2 Tbsp finely chopped red onion
  • 2 Tbsp chopped fresh mint
  • 2 Tbsp chopped cilantro
  • 2 Tbsp orange juice
  • Combine all ingredients in a bowl
  • Stir, cover and chill for 1 hour in refrigerator

Baked Salmon-

  • 2 Tbsp agave nectar
  • 2 Tbsp lime juice
  • 1-2 pounds salmon fillet, skinned and cut into 2 or 4 equal pieces
  • 1/4 tsp sea salt
  • 1/4 tsp pepper
  • Combine agave nectar, lime juice, salt & pepper in a bowl and brush the mixture onto both sides of salmon filets
  • Place salmon on a baking sheet, coated with thin layer of olive oil
  • Bake at 450 deg F for 20 minutes or until the fish flakes easily when tested with a fork.
  • Serve topped with the mango salsa with desired grain and/or vegetable side

Serves 2-4

Approx 480 Calories per serving (salmon & salsa only)
